OSCAR® Signature Shellfish Fond has a classic intense flavour profile with authentic notes of shellfish and is great in sauces, soups and bisques. You get a complex fond but with lots of depth and base that makes it easy to develop further. You can reduce it without it becoming bitter. You can also use it reduced cold in e.g. a shellfish dressing or as a slightly warm and light espuma from siphon. Made with 0,32 kg shellfish per 1 l fond.
