Cold Chicken Salad
Ingredients
10 persons
- 2 pieces of chicken, large
- 60 ml OSCAR® Chicken Fond Concentrate
- 1 bunch of asparagus, blanched
- 800 g cooked new potatoes
- 5 heads of lettuce
- fresh herbs
- pickled red onion
Dressing:
- 100 ml chicken cooking liquid (or water)
- 40 ml OSCAR® Vegetable Fond Concentrate
- 15 g thickener
- 300 g low-fat fromage frais (0.3% fat)
- mustard
- chives
Preparation
- Rinse the chicken and poach it in water with OSCAR® Chicken Fond Concentrate. Let the chicken soak in the stock to retain the juices.
- Remove the chickens from the cooking stock and bring the stock back to the boil with OSCAR® Vegetable Fond Concentrate. Gradually add the thickener while stirring, and bring to a boil.
- Chill the dressing mixture, then whisk it lightly before folding in the fromage frais. Season with mustard and finely chopped chives.
- Shred the chicken and mix it with the dressing.
- Cut the potatoes, asparagus, and lettuce into bite-sized pieces, and serve alongside the chicken.
- Serve with fresh herbs and pickled red onions.
