Cold Chicken Salad


A fresh and delicious recipe for cold chicken salad with green asparagus, new potatoes, lettuce, fresh herbs and pickled red onions. The dressing is made from the chicken stock, mustard, OSCAR® Vegetable Fond Concentrate, fromage frais, and finely chopped chives. A perfect dish for chefs who want to impress their guests with a light and tasty summer salad. The salad can be served with a poached egg on top.

Ingredients

10 persons

  • 2 pieces of chicken, large
  • 60 ml OSCAR® Chicken Fond Concentrate
  • 1 bunch of asparagus, blanched 
  • 800 g cooked new potatoes 
  • 5 heads of lettuce
  • fresh herbs 
  • pickled red onion

Dressing:

  • 100 ml chicken cooking liquid (or water)
  • 40 ml OSCAR® Vegetable Fond Concentrate
  • 15 g thickener 
  • 300 g low-fat fromage frais (0.3% fat) 
  • mustard
  • chives

Preparation

  1. Rinse the chicken and poach it in water with OSCAR® Chicken Fond Concentrate. Let the chicken soak in the stock to retain the juices. 
  2. Remove the chickens from the cooking stock and bring the stock back to the boil with OSCAR® Vegetable Fond Concentrate. Gradually add the thickener while stirring, and bring to a boil.
  3. Chill the dressing mixture, then whisk it lightly before folding in the fromage frais. Season with mustard and finely chopped chives. 
  4. Shred the chicken and mix it with the dressing.   
  5. Cut the potatoes, asparagus, and lettuce into bite-sized pieces, and serve alongside the chicken. 
  6. Serve with fresh herbs and pickled red onions.
