Creamy cold pea soup with sour cream
Ingredients
10 persons
- 4 pcs shallots
- 2 cloves of garlic
- 2 tbsp olive oil
- ¼ bunch of thyme
- 1 kg frozen peas
- 1 liter of water
- 100 ml OSCAR® Vegetable Fond Concentrate
- 200 g cream cheese (or sour cream)
- 2 lemons
- salt and freshly ground pepper
Preparation
- Chop the onion and garlic and sauté in the oil until translucent.
- Add thyme, frozen peas, water, and OSCAR® Vegetable Fond Concentrate, and bring to a boil.
- Blend until you get a creamy soup. You can add the fresh cheese/cream directly to the soup or use it for seasoning afterward.
- Season to taste with lemon juice, salt, and pepper.
Tip: Serve with shrimps or smoked salmon.
