Creamy cold pea soup with sour cream


This creamy cold pea soup is a great summer favorite. The soup is based on peas, onion, thyme, lemon, sour cream and OSCAR® Vegetable Fond Concentrate. It's perfect when you want to serve a refreshing and delicious starter for your guests. For added flavor and texture, serve the soup with shrimps or smoked salmon.

Ingredients

10 persons

  • 4 pcs shallots
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • ¼ bunch of thyme
  • 1 kg frozen peas
  • 1 liter of water
  • 100 ml OSCAR® Vegetable Fond Concentrate 
  • 200 g cream cheese (or sour cream)
  • 2 lemons
  • salt and freshly ground pepper

Preparation

  1. Chop the onion and garlic and sauté in the oil until translucent.
  2. Add thyme, frozen peas, water, and OSCAR® Vegetable Fond Concentrate, and bring to a boil.
  3. Blend until you get a creamy soup. You can add the fresh cheese/cream directly to the soup or use it for seasoning afterward.
  4. Season to taste with lemon juice, salt, and pepper.

Tip: Serve with shrimps or smoked salmon.
