Marinated Herring


Marinated white herring with pickled shiitake, seasoned with OSCAR® Mushroom Fond Concentrate.

Ingredients

10 persons

  • 10 whole marinated white herring fillets 
  • 100 g shiitake
  • 2 dl vinegar
  • 50 g sugar
  • 30 ml OSCAR® Mushroom Fond Concentrate
  • long pepper 
  • thyme

Preparation

  1. Roast the shiitake mushrooms in a dry pan, or in a little olive oil if preferred.
  2. Add vinegar, sugar, OSCAR® Mushroom Fond Concentrate, and long pepper. Bring the brine to a boil.
  3. Let the brine cool, then pour it over the marinated herring. Let it steep for at least 24 hours.
