Marinated Herring
Ingredients
10 persons
- 10 whole marinated white herring fillets
- 100 g shiitake
- 2 dl vinegar
- 50 g sugar
- 30 ml OSCAR® Mushroom Fond Concentrate
- long pepper
- thyme
Preparation
- Roast the shiitake mushrooms in a dry pan, or in a little olive oil if preferred.
- Add vinegar, sugar, OSCAR® Mushroom Fond Concentrate, and long pepper. Bring the brine to a boil.
- Let the brine cool, then pour it over the marinated herring. Let it steep for at least 24 hours.
