Morel sauce
Ingredients
10 persons
- 500 ml OSCAR® Signature Chicken Fond
- 40 g OSCAR® Premium White Wine Reduction
- 30 g dry morels
- 2 dl cream
- 70 g butter
- 50 g sour cream 48%
Preparation
- Soak the morels, then sauté them in butter and glaze them with OSCAR® Signature Chicken Fond. Strain the morels and set them aside.
- Add cream and OSCAR® Premium White Wine Reduction to the chicken stock and reduce to 250 ml.
- To serve, whisk the stock with butter and sour cream until frothy, then add the morels.
