Morel sauce


Serving suggestions: Guinea Fowl, Spinach, Potatoes Roasted in Duck Fat and Morel Sauce.

Ingredients

10 persons

  • 500 ml OSCAR® Signature Chicken Fond
  • 40 g OSCAR® Premium White Wine Reduction
  • 30 g dry morels 
  • 2 dl cream
  • 70 g butter
  • 50 g sour cream 48%

Preparation

  1. Soak the morels, then sauté them in butter and glaze them with OSCAR® Signature Chicken Fond. Strain the morels and set them aside.
  2. Add cream and OSCAR® Premium White Wine Reduction to the chicken stock and reduce to 250 ml.
  3. To serve, whisk the stock with butter and sour cream until frothy, then add the morels.
