Peas a la Francaise

Ingredients

10 persons

  • 1200 g peas (frozen can be used)
  • 2 heads of lettuce
  • 20 pearl onions
  • 120 g butter in cubes
  • 3 tsp sugar
  • 50 g OSCAR® Vegetable Fond Concentrate 
  • 200 ml water
  • 1 bunch of chervil, chopped

Preparation

  1. Rinse and chop the lettuce, peel the pearl onions, and shell the peas.
  2. Bring water, sugar, 100 g butter and OSCAR® Vegetable Fond Concentrate to a boil. Add the pearl onions, peas, and lettuce, and simmer for 6-8 minutes 
  3. Add the remaining butter and chopped chervil just before serving. 

Tip: Add ventreche bacon to the recipe.
