Saffron Foam
Ingredients

- 20 g OSCAR® Premium White Wine Reduction
- 250 g of water
- 20 g OSCAR® Vegetable Fond Concentrate
- 5 strands of saffron
- 200 g whipping cream
Preparation
- Bring water, cream, OSCAR® Premium White Wine Reduction and OSCAR® Vegetable Fond Concentrate to a boil with saffron strands, and leave to infuse for 10 minutes.
- Strain the mixture and transfer to a siphon.
