Serving suggestions: Use the saffron foam for oysters or fried scallops.

Ingredients

10 persons

  • 20 g OSCAR® Premium White Wine Reduction 
  • 250 g of water
  • 20 g OSCAR® Vegetable Fond Concentrate
  • 5 strands of saffron
  • 200 g whipping cream

Preparation

  1. Bring water, cream, OSCAR® Premium White Wine Reduction and OSCAR® Vegetable Fond Concentrate to a boil with saffron strands, and leave to infuse for 10 minutes. 
  2. Strain the mixture and transfer to a siphon.
