Shellfish Beurre Blanc with Roe
Ingredients

- 4 dl OSCAR® Signature Shellfish Fond
- 20 g OSCAR® Premium White Wine Reduction
- 250 g unsalted butter
- 30 g trout roe
- salt and pepper
Preparation
- Simmer OSCAR® Signature Shellfish Fond until reduced to 1 dl, and add OSCAR® Premium White Wine Reduction.
- Whisk in the cold butter until the sauce becomes creamy.
- Add the roe, and avoid whisking the sauce afterward.
- Season with salt and pepper.
