Shellfish Beurre Blanc with Roe


The recipe gives 4 dl sauce.

Ingredients

10 persons

  • 4 dl OSCAR® Signature Shellfish Fond
  • 20 g OSCAR® Premium White Wine Reduction
  • 250 g unsalted butter 
  • 30 g trout roe 
  • salt and pepper

Preparation

  1. Simmer OSCAR® Signature Shellfish Fond until reduced to 1 dl, and add OSCAR® Premium White Wine Reduction.
  2. Whisk in the cold butter until the sauce becomes creamy.
  3. Add the roe, and avoid whisking the sauce afterward.
  4. Season with salt and pepper.
