Vegetable Butter Sauce


Serving suggestions: Grilled steak, Tomatoes, Lettuce and Vegetable Butter Sauce.

Ingredients

10 persons

  • 500 g butter, salted
  • 500 g whole milk
  • 40 g OSCAR® Vegetable Fond Concentrate
  • 200 g egg whites

Preparation

  1. Warm the butter and milk in a saucepan. Add OSCAR® Vegetable Fond Concentrate and blend with the egg whites. 
  2. Season the mixture with salt and more OSCAR® Vegetable Fond Concentrate, if necessary.
  3. Place the mixture in a siphon and keep it warm in a water bath at 55°C. 

Tip: The sauce base can be combined with any OSCAR® Fond concentrate.
