Vegetable Butter Sauce
Ingredients
10 persons
- 500 g butter, salted
- 500 g whole milk
- 40 g OSCAR® Vegetable Fond Concentrate
- 200 g egg whites
Preparation
- Warm the butter and milk in a saucepan. Add OSCAR® Vegetable Fond Concentrate and blend with the egg whites.
- Season the mixture with salt and more OSCAR® Vegetable Fond Concentrate, if necessary.
- Place the mixture in a siphon and keep it warm in a water bath at 55°C.
Tip: The sauce base can be combined with any OSCAR® Fond concentrate.
